Sheila Rae, the creator of Bizzy Lizzy Flourless Bakery, started her career as a Home Economics Teacher and then turned Cooking Show Host for expo companies across the Midwest. Sheila would teach her audience the art of making bread in 3 minutes. Her love of food and recipe development prompted her to write a cookbook. This cookbook is full of FLOUR. However, it is Sheila's goal to transform this collection of family classics into flourless recipes. Sheila will be adding recipes and pictures of her flourless creations on this website and her Bizzy Lizzy Flourless Bakery Facebook page.
Recipe Transformation Number One, Page 107 (In Cooking Simple with Sheila Rae)
1 cup Butter
1 (8 ounces) Cream Cheese
1 1/4 cup Natural Cane Sugar
1 teaspoon Natural Vanilla
3 1/4 cups Oatmeal (not quick oats)
1/2 cup high-quality chocolate chips (Ghirardelli is my favorite)
Butter and cream cheese needs to be room temperature. Note: I prefer a mixer, this is very heavy dough. Add remaining ingredients except for the chocolate chips. Thoroughly mix. Note: I let it sit 30 minutes and stirred again for a minute and added chips. I used a small cookie scoop and then pressed to about 1/2 inch thickness with wet fingers. Bake at 375 degrees for 12-15 minutes.
Benefits of flourless: I eliminated 3/4 cup of sugar from the original recipe and you get rid of white flour that turns to sugar the minute it hits your tongue. While adding the oatmeal which is both digestive and heart-healthy, not bad for a cookie.
