Baby yourself... With Cookies!

 Let's be honest: being a "grown-up" isn't always all it's cracked up to be. So much to do, so many responsibilities, and so many people depending on you...kind of makes you long for simpler times, doesn't it? Especially this time of year, when the kids are out of school, running through sprinklers and biking around the block, while you're still stuck with the daily grind, longing for a simpler time.

It's how we keep from going crazy while staying so busy--simple ingredients, simple recipes, and a simple desire to share our great wheat-free ideas with you. No need to cry over complications! You can "baby" your inner child with these simple, wheat-free baby-food-based cookie recipes, from our kitchen to yours. Perfect for the kids in your life, or the kid in you.
Just combine our Bizzy Lizzy Flourless Cookie Mix with 6 ounces baby food of choice (banana, date, apple and carrot are all great choices)--store-bought or home-milled--1 teaspoon vanilla extract, 5 tablespoons oil of choice (canola, coconut, etc.) and 2 eggs. You can also add a pinch here or there of spice, like cinnamon, nutmeg, ginger or (think apple cinnammon, or carrot cake), or you can substitute 1/4 cup applesauce for the eggs to make the cookies vegan.
Then drop cookies and flatten to 1/4 inch on your baking sheet. Bake for 8 to 10 minutes at 350ºF (depending on size), and voila! Cookies so creative, they'll make anyone feel like a kid again.
